Peach Upside Down Cake

3 large peaches
1/4 c (1/2 stick) butter
1/2 c firmly packed brown sugar
1-1/2 c sifted cake flour
3/4 c granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1/3 c vegetable shortening
2/3 c milk
1/2 tsp. vanilla
2 eggs
Melt butter in a 9x9x2 baking pan in a moderate oven (350 degrees). Remove from oven; sprinkle brown sugar evenly in pan.
Slice and peel peaches. Arrange peach slices in row over sugar.
Sift flour, sugar, baking powder, and salt into large bowl.
Add shortening, milk, vanilla, and eggs. Beat with electric mixer at low speed until mixed. Beat at high speed for 4 mins. or until very smooth and fluffy.
Spoon over peaches, covering completely.
Bake in a moderate oven (350 degrees) for 45 min. or until center springs back when pressed with fingers. Loosen cake from edges with a knife, invert, and shake gently while lifting off pan.
